Lanikai Brewing Company is the only producer of Hawaiian Wild Ales®. We have been collecting yeast and bacteria all over the state of Hawaii from the Mountains, Rainforest, Volcano, Beaches and farmlands to bring distinct beers brewed and fermented with Hawaiian Yeast and Microflora. We have traveled to every corner of every island while “bioprospecting” and have collected over 150 different Native Hawaiian Yeast and Microflora. The initial collection took over 3 years to launch the first series. We also had to design and fabricate specific equipment to capture this as a mobile koelship. Hawaiian Wild ales are constantly changing and evolving.
